Pomegranate Tiramisu

1 cup pomegranate jelly
6 tablespoons pomegranate liqueur
1 pound mascarpone cheese, at room temperature
1 cup whipping cream
1/4 cup sugar
1 teaspoon pure vanilla extract
28 soft ladyfingers*
3 cups pomegranate arils
confectioners sugar

Stir the jelly and 4 tablespoons of the pomegranate liqueur to blend. Set aside.

Combine the mascarpone and 2 tablespoons liqueur in a large bowl and blend. Set aside.

Beat the whipping cream, sugar and vanilla until soft peaks form. Stir 1/3 of the whipped cream mixture into the mascarpone mixture. Fold in the remaining whipped cream mixture.

Line the bottom of a 13X9 baking dish with 1/2 of the ladyfingers. Spread 1/2 of the jelly mixture over the ladyfingers. Spread 1/2 of the mascarpone mixture over the jelly and cover with 1-1/2 cups of pomegranate arils. Repeat the layer with ladyfingers, jelly, mascarpone and cover with the last 1-1/2 cups of arils.

Cover and refrigerate a minimum of 3 hours or overnight.

Yield: 12 servings
